Chicken with burgundy sauce
150 g chicken breasts or young chicken (“baby chicken”)
30 g bacon
50 g onion
30 g carrots
20 g garlic
bay leaves, thyme, a small amount of parsley,
pepper, clove, salt
0.2 l red wine
30 g champignon caps
30 g butter
20 g flour

Render finely cut bacon. Add chopped onion, carrots, garlic, seasoning, and stew slowly for about 10 min before sprinkling with wine and stewing for another 30 min.
Press the finished sauce through a sieve and add a butter ball (1 teaspoon butter and 2 tablespoon flour) for thickening. Add champignons stewed on a small amount of butter, young carrots, a pinch of parsley, and salt the dish to taste. Roast chicken breasts or young (baby) chicken in the meantime and serve Farm Frites Noisettes (to be fried in deep fryer at 175 °C for approx. 3.5 min until golden) as side dish.
