Roast beef with Farm Frites Pommes Parisiennes

Ingrediënten:

Pommes Parisiennes 20/30 (koelvers / chilled, voorgekookt)
Roast beef:
Roast beef 1500g
Oil (butter) 100g
Salt
Pepper

Vegetables:
200g carrot
1 leek
2 bulb
3 horseradish
400 ml cream
50g flour

Roast beef:
Season the meat with salt and pepper. Bake the meat in a preheated oven on 180°C for 30-45 minutes.

Vegetables:
Cut the carrots in to slivers and boil them for 5 minutes. Add the bulbs and the leek and cook it for 3 minutes. Put the vegetables in a strainer to get rid of the remaining fluids. Blend the horseradishes with cream and season it with salt and sugar. Add the flower to thicken the sauce.

Farm Frites Pommes Parisiennes:
Fry Farm Frites Pommes Parisiennes till they are golden coloured for approximately 6 minutes at temperature of 175 °C.

Presentation on the plate:
Take the roast beef from the stove and cut it into thin slices. Put Farm Frites Pommes Parisiennes in the middle of the plate, lay the slices of meat on Farm Frites Pommes Parisiennes and put the vegetables around them. Pour vegetable sauce over them and sprinkle it with some parsley and chive.
