How to serve the tastiest fries, even during peak hours
The summer months are great for your business: bustling terraces, full tills. But also: it's all hands on deck. With these do's and don'ts, you’ll serve the best golden fries even during the busiest times.
Do’s
Choose the Right Fries
During busy times, dishes can sometimes stay on the pass for a while. So, opt for fries that stay warm and crispy for longer. For example, our new Scoops skin-on coated fries can be fully cooked in just 3 minutes, and thanks to the coating, they stay warm and crispy longer.
Use a Powerful Fryer
The fastest way to fry the perfect fries is by using a constant temperature of 175°C. A powerful fryer ensures that the oil quickly returns to the right temperature after you’ve added the fries.
Go for Speed
For peak times, there’s fries you can serve in as little as 2 minutes: Farm Frites’ Fast Fry. These fries are available in both fresh chilled and frozen varieties.
Leave the Packaging Open
Are your customers taking their order to go? Advise them not to fully close the packaging, or use packaging with ventilation holes. This allows the steam from the hot fries to escape, keeping them crispy. Pack sauces separately so they don't make the fries soggy on the go.

Don’ts
Overfilled Fryer Basket
It may seem logical: you have many orders to prepare, so you throw as many fries into the basket as possible. However, this is best avoided. A basket that’s too full lowers the oil temperature, causing the fries to fry unevenly and preventing them from becoming crisp.
Double Frying Fries
Trying to speed up the process by pre-frying fries? It’s better not to. Even cooled fries shouldn’t be re-fried. Fries that are fried twice absorb too much fat and become soggy.
