Sunny Scoops & Bites

This is what you need for four people
Scoops cheese
75 g Cheddar cheese (grated)
Shrimp in olive oil
2 tbsp olive oil
10 peeled shrimp (fresh or frozen)
2 cloves garlic (sliced)
2 tsp chili flakes
1 tsp smoked paprika
Splash of sherry or white wine
1-2 tbsp flat-leaf parsley or curly parsley
Bruschetta
1 baguette or ciabatta
1 tomato (diced)
Extra virgin olive oil
Fresh herbs (parsley/basil)
1 garlic clove
Other
Guacamole
Sour cream
Olives
Manchego cheese
This is how you prepare the dish
Fry the Farm Frites Scoops according to the package instructions. Once cooked, place them on a baking sheet lined with greaseproof paper. Generously grate Cheddar cheese over the Scoops and bake them in the oven until the cheese melts.
Slice the garlic thinly. Heat a bit of olive oil in a frying pan over medium heat. Add the garlic and chili flakes, cooking for 20-30 seconds while stirring. Add the shrimp, smoked paprika, and a splash of sherry or white wine. Stir everything together and cook for a few minutes until the shrimp are fully cooked. Season with salt and pepper, then stir in half of the parsley. Garnish with the remaining parsley.
Slice the baguette or ciabatta into pieces and toast them in the oven. After toasting, rub the bread with a halved garlic clove. Dice the tomato and mix it with extra virgin olive oil, salt, pepper, grated garlic, and fresh herbs. Top each piece of bread with the tomato mixture.
To assemble the dish, serve the cheesy Scoops with guacamole and sour cream. Add the shrimp in olive oil and top with the bruschetta. Garnish with olives and Manchego cheese for added flavour.
