Urban Loaded Fries with Marinated Chicken Tikka

A bold and flavour-packed twist on loaded fries. Tender chicken tikka, creamy raita and fresh herbs served over crispy Urban Fries. Perfect as a premium street food-style dish. 
This is what you need for two people: 
  • 300 g Urban Fries 

  • 100 g chicken tikka pieces (pre-cooked or grilled) 

  • 2 tbsp raita (yoghurt with cucumber & mint) 

  • 1 tbsp pomegranate seeds 

  • 1 tsp finely chopped fresh mint 

For the chicken marinade (if preparing from scratch): 

  • 2 tbsp full-fat yoghurt 

  • 1 tsp tikka spice mix 

  • 1 garlic clove, crushed 

  • Juice of ½ lemon 

This is how you prepare your dish: 
  1. Combine the yoghurt, tikka spices, crushed garlic, and lemon juice. Coat the chicken pieces and refrigerate for at least 1 hour. Then grill or pan-fry until cooked through and lightly charred. 

  2. Mix full-fat yoghurt with finely chopped cucumber, fresh mint, and a pinch of salt. 

  3. Prepare the Urban Fries according to the on-pack instructions until golden and crispy. 

  4. Layer the hot Urban Fries on a serving plate. Top with the warm chicken tikka pieces, spoon over the raita, and finish with a scattering of pomegranate seeds and chopped mint. 

A quick-serve dish that combines spice, texture and freshness. Ideal for casual dining or modern street food menus.
