Fish and Fun
Try a different take on traditional fish and chips with this Fish and Fun recipe. We've replaced the thick fries with our Finest 5mm and added a green pea and mint puree for a fresh twist. Served on a news paper, this is an ideal street food dish.
This is what you need for two people
300g Finest fries 5mm
2 battered fillets of fish
250g peas
Mint leaves
1 lime
4 tbsp. of tartar sauce
Smoked paprika powder
Cayenne pepper
This is how you prepare your dish
Boil 1 litre of water with 20g of salt.
Add the peas (= parboiling) for about 15 seconds. Rinse them in cold water.
Put the peas in a measuring cup together with the leaves of mint.
Mix the whole with a blender.
Season it with cayenne pepper and salt.
Heat up the deep fryer to 175°C. Let the battered fillets of fish fry for about 3 to 5 minutes, until they have an amber-like colour, and drain them on a plate with paper towel.
Prepare the fries according to the package.
Serve the fish and the fries with the tartar sauce on a newspaper, for a typical street food feeling.
Season with pepper, salt and smoked paprika powder. As a finishing touch, sprinkle mint leaves over the dish and put a slice of lime on the side.
